Grilled Beef Braciole

Grilled Beef Braciole with Zucchini Relish

1 - 2 lbs round steak, pounded to 1/4 thickness
2 tablespoon olive oil
2 tablespoon chopped basil
1 tablespoon of oregano
2 tablespoons zucchini relish
1/4 cup of grated pecorino Romano cheese

Directions:  Heat the grill to high.   Place the steak on a flat service and pound the steak to 1/4 thickness.  
Rub olive oil over steak.  Sprinkle with salt and pepper to taste. Sprinkle chopped basil, oregano and zucchini relish over the steak.  
Shred cheese over the steak, leaving 1/2 inch border around the sides.
Roll the meat up like a jelly roll and use tooth picks or twine to hold the meat together.  
Brush the entire outside of the steak with the oil and salt and pepper.  
Place on grill, seam side up and grill until golden brown on all sides.  It will need about 10 minutes on each side.  
Remove from grill and let rest for 10 minutes prior to slicing. Slice 1/2 inch thick slices.  

Serve with fresh vegetables and potatoes. Enjoy!

July is Burger Month!

RelishThis loves this time of the year.  It's great to do backyard entertaining with family and friends, try new recipes and just enjoy summer foods.  This month we are spotlighting burgers.  It's an all American BBQ favorite and one of ours too.  We love adorning our burgers and hot dogs with our different flavors of Zucchini Relish.  Our regular Zucchini Relish is a flavorful and a little sweet while Zucchini Relish Hot has some jalapeno bite to it and Zucchini Relish HOT HOT has more heat from the addition of habenero peppers.

Our favorite Grilled Burger recipe is below and here are some additional summertime uses for Zucchini Relish:

  • Spice up your Deviled Eggs

  • Stir into softened cream cheese for a bagel spread

  • Add to your Tuna Salad

  • Serve along side your other condiments

Grilled Burgers with Zucchini Relish

These burgers are a twist on the traditional backyard favorite.  A dollop of zucchini relish gives extra flavor to this standard.  

6 Servings Prep/Total Time: 30min.                                                                           
3/4 cup chopped fresh mushrooms
1/4 cup shredded carrot
1/4 cup finely chopped onion
2 tablespoons minced fresh parsley
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon hot pepper sauce
1/8 teaspoon pepper
1 jar zucchini relish
1-1/4 pounds ground beef
6 whole wheat hamburger buns, split
6 lettuce leaves
12 tomato slices
Add first eight burger ingredients. Crumble beef over mixture and mix well. Shape into six 1/2-in.-thick patties. Grill patties, covered, over medium-hot heat for 3-4 minutes on each
side or until meat is no longer pink. Serve on buns with lettuce,
tomato and Zucchini Relish.

If you want to try a low carb "potato" salad – try this one?!

Cauliflower Salad
1 head of cauliflower steamed or boiled until tender in bite size pieces
6 boiled eggs (when done peel eggs, rinse cut into small pieces)
1/3 cup (appx) miracle whip or mayonnaise
3 tbsp. of mustard
3 tbsp. of zucchini relish
1/8 cup of chopped onion (uncooked) can use more if you prefer
salt/pepper to taste

Mix all together and you can garnish with egg slices and parsley
chill overnight.   


Breakfast Bruschetta for overnight guests

Breakfast Bruchetta is a great quick breakfast you can prepare ahead of time.  So, if you are having a few friends over for the Super Bowl and they stay overnight, make them a delicious quick breakfast.  Most of it can be prepared ahead of time.

Breakfast Bruschetta Ingredients:

  •  1 loaf French bread, diagonally sliced
  •   2 tablespoons Pure Olive Oil
  •  1 teaspoon butter
  •  2 tablespoons of zucchini relish
  • 4 large eggs, beaten
  • 4 slices bacon, cooked crisp, coarsely chopped
  • 4 breakfast sausage links, cooked, thinly sliced
  • 3/4 cup cherry tomatoes, diced
  • Sharp Cheddar cheese (optional)


1.    HEAT broiler. Brush both sides of bread with oil and place on a large baking sheet. Toast bread under broiler on both sides.

2.     MELT butter in medium pan over medium heat.  Add eggs to pan and scramble to desire doneness. Spread relish on bottom of bread. 

3.    DIVIDE eggs, bacon, sausage and tomatoes between bread slices. Top with cheese, if desired. Serve immediately.

4.   Greatwith fresh fruit.  Enjoy!

Super Bowl 2016 Sliders!

Meatball Sliders (Great for Super Bowl parties!)

12 - 16 Servings -   35 minutes


  • ¼ cup of finely chopped onion
  • 2 tablespoons minced fresh parsley
  • 1 lbs. loose  Spicy Sausage
  • 1 lbs. of Ground Beef
  • Dash of Salt and Pepper
  • 1/2 jar zucchini relish of choice
  • 1 tablespoon of milk
  • 1 cup of seasoned tomato sauce
  • ½ cup of Grated Parmesan Cheese
  • 1 Package of small rolls
  • 6 oz. of shredded mozzarella cheese


Preheat oven to 350°F

In a large bowl, combine onion, parsley, salt, pepper, sausage, ground meat, zucchini relish, and milk.  Mix together well.  Shape into2 inch balls and place on a shallow baking pan.  Bake for 20 minutes turning the meatballs frequently.  Place in a crock pot when done and top with your favorite tomato sauce.   

Serve meatball on each roll and sprinkle with mozzarella cheese. 

Farm Show Success!

What a great way to kick off 2016!  RelishThis was part of this year's Pennsylvania Farm Show in Harrisburg PA.  We called booth 5020 our home during the show and got to meet lots of great people.  The various flavors of our relish were sampled with Herrs Potato Chips.   Herrs generously donated a number of cases of their chips to use as "dippers" of our relish.   Our booth visitors loved the combination of these delicious local potato chip with our zucchini relish products.


We estimate that we sampled our zucchini relish with over 2,599 people ... of ALL ages!  Our most popular relish at the PA Farm Show was our Hot Zucchini Relish flavor.

This little guy gave us a thumbs up! 

Baked Brie

Baked Brie                                                                                                          


0.5 (17 ounce) package frozen puff pastry, thawed or croissants

1 (8 ounce) package brie cheese, round

1⁄8 cup toasted almond, slices (optional) or walnuts

 1⁄4 cup Raspberry preserves or Strawberry preserves

Preheat oven to 425.  Lightly grease cookie sheet.  Roll puff pastry out slightly.  Place cheese wheel on top (leave rind on). Cut cheese in half. Place preserves and nuts in middle of cheese. Place other half back on Brie and buddle puff pastry around cheese.  Bake for 20-25 minutes.  Let cool for five minutes. Serve with your favorite crackers. Enjoy!
