Grilled Beef Braciole

Grilled Beef Braciole with Zucchini Relish

1 - 2 lbs round steak, pounded to 1/4 thickness
2 tablespoon olive oil
2 tablespoon chopped basil
1 tablespoon of oregano
2 tablespoons zucchini relish
1/4 cup of grated pecorino Romano cheese

Directions:  Heat the grill to high.   Place the steak on a flat service and pound the steak to 1/4 thickness.  
Rub olive oil over steak.  Sprinkle with salt and pepper to taste. Sprinkle chopped basil, oregano and zucchini relish over the steak.  
Shred cheese over the steak, leaving 1/2 inch border around the sides.
Roll the meat up like a jelly roll and use tooth picks or twine to hold the meat together.  
Brush the entire outside of the steak with the oil and salt and pepper.  
Place on grill, seam side up and grill until golden brown on all sides.  It will need about 10 minutes on each side.  
Remove from grill and let rest for 10 minutes prior to slicing. Slice 1/2 inch thick slices.  

Serve with fresh vegetables and potatoes. Enjoy!

Broiled Shrimp with Basil


This is great for an everyday meal or for special dinner.  It's easy to make and looks beautiful on a serving platter.   


  • 1 lbs. of Shrimp of choice                                 
  • Olive oil
  • Fresh Basil

Directions:  Clean shrimp and place in a storage bag and drizzle with olive oil.  Take each shrimp and wrap with basil, securing it with a toothpick.  Broil for approximately 4 minutes turning to cook other side.  Depending on the size of shrimp will allow for time.  Make sure shrimp is cooked thoroughly.   #RelishThis




(makes 4 yummy burgers)

4 beef burgers
4 Mexican torta rolls
1 can refried beans
1 packet taco seasoning
1 bag Mexican Blend shredded cheese
1 onion, diced
2 tablespoons ofZucchini Relish

1.    Grilled Beef patties
2.    Split torta rolls.
3.    Heat beans in a small saucepan on medium heat; stir in taco seasoning and zucchini relish until well blended.
4.    Place heated beef patty on bottom half of each torta roll. Top with shredded cheese and diced onion.
